Sierra de Gredos
Canopy Enologists Alfonso Chacón and Belarmino Fernández began Canopy in 2003 . Belén Hita was added in 2021. This is the heart of Canopy. Located in the Sierra de Gredos area of Méntrida near Toledo, with several plots near the mountain town of El Real de San Vicente between the Tajo and Tietar Valleys. Old vine Garnacha on Granite soils produces sublime wines of power and finesse. Foudres and large barrels are the main vessels for aging.

It is in the different stages of the harvest, such as the two selection processes that they carry out—one at the vineyard and another when the grapes arrive at the winery.. They crush the grapes in small 1,500-liter vats to extract all the aromas and nuances in the gentlest way possible. This is the origin of Canopy wines.

They begin with pre-fermentation cold maceration, to draw out everything their old grape vines have to give. Then they gently pump over the juice to gradually shape the wines.
​
Only large barrels and foudres made of French oak are used to bring out the best of each vineyard parcel in terms of character and uniqueness. Depending on the wine, they will remain in barrels from 3 to 18 months, and they will be regularly tasted to determine their progress. At the end, after gentle filtration, they will spend some time in the bottle where they will complete the aging process.

The Garncha grape vines in the Sierra de Gredos planted at a high altitude on Granite soils are the real treasures of Bodegas Canopy.They grow them without using any kind of chemical or herbicide, in order to keep the soil of their vineyards—veritable gardens—alive and thriving. In this way, they let the true personality of Garnacha grapes shine to create the best Gredos wines possible.​
